Making lunch for work

I usually buy some coleslaw, feta cheese, beetroot, Peppers, raddish, beans, get it all prepared for the week, then hoy a mix of it in a tub.

Anyone do anything different/easier? (apart from spending a fortune in a shop)

I tend to go along the soup route this time of year, very easy to make and healthy
 
Monday was always the best bait day, cold sliced meat that was left from the Sunday dinner. Pork with stuffing, lamb with Durham salad or beef with sliced beetroot, sliced bread and lurpak.
 
She's just bought a slow cooker and we had her first attempt a soup today. It was ok but had the consistency of mashed potato. There's quite a bit left, will it be possible to water it down?
