It's called shoehorning everything to fit the narrative.

Basically speaking it's a case of turning the circle into a ball by using known distances on that circle and transferring them to fit a ball.
This is why the so-called southern hemisphere is virtually empty on the global map. For good reason.

To do a test on water level you will need to have a sample that is bigger than the curvature of the earth. Otherwise both conclusions will produce the same expected result.

But for what must be the hundredth time you cannot physically prove the earth is either flat or curved with water level and spirit level unless (as @DaveH so eloquently put) you have a spirit level capable of measuring the curve which would be best part of 500m long. Water finding it's own level.........it does but what does that prove? Techniques for building plumb and level...again what does that prove? Building roads, bridges, railway tracks etc actually specifically accounts for the earths curvature in the design. And you have previously mentioned theodolites......get hold of one and use it as it will prove the curvature of the earth if used correctly.

Simple stuff like theodolites, actual water level tubes, containers level marked showing water level. Too many to mention but all relevant.

Try pouring water on a ball of any size and watch it cascade off of it.
Why does it do this?
It's because it does not offer any container for it to find its level.

It's so simple and provable and so repeatable and observable.
