Staten Island ferry
Maybe Ellis Island and the Sea, Air & Space museum

Any other “must do” or hidden gems that I should try to fit in.

i did everything you suggested like Central Park (it’s a park...) plus Grand Central Station, Greenwich Village, Washington Square, Little Italy, Brooklyn Bridge - for personal interest and film/musical heritage reasons.

... just savour a traditional corner diner type place for a while. Listen to the accents.
