Lots of instruments are easy to learn to a level where you can have a lot of fun with them. Mastering them is a very different thing though, and something almost everyone doesn't need to do.
I think a lot of people are put off by misunderstanding the idea that they need to master it to achieve something.
Acoustic guitar would be my recommendation. Cheap, portable, simple and quick to get the basics and you'll fairly quickly be able to play simple versions of songs you know well, which is fun and gives you enthusiasm to keep going
