Anyone got any decent chilli recipes?

I think chilli is something you just dive in and make then perfect it over the years. I used to make a cracking one when I had my flat and all the lads would pile round on Friday night when they knew I was making it.
Got out of the habit now and made my first one in years a few weeks ago.
Got a plan for when I make my next one. Could be the biggest culinary breakthrough since someone battered a fish and fried some potatoes.

No: Minced meat, beans, onions or tomatoes under any circumstances.

Use: Beef in cubes, peppers, garlic, beer

Serve with: Salsa camole, raw onions, grated cheese, sour cream, pickled jalapenos, cornbread, beer and/or margeritas
