Frozen oven chips are easiest
If you're doing them with potatoes, you need to get all the starch off. Ideally cut the chips and soak them in a bowl of water, or if you haven't got time, give them a really good rinse. Dry them in a clean tea towel or with kitchen roll. Put them in a mixing bowl and drizzle about a teaspoon of oil on them, then mix them around until they're all coated.
If you want flavoured chips/wedges, add herbs/garlic/salt and pepper/chilli etc., when you're doing the oil mixing bit.
