Recipe idea needed: sausages

Just got some snags out of the freezer. Cumberlands.

Bored of the usual recipes so looking for any ideas the mighty smb might have that I haven't come across.

I can offer you one. Toulouse Sausage. Garlic, red onion, bacon, goose, duck, porc, no bread, occasional black olive. Always goose grease and pepper.

Have a look, recettes vary hugely, even in Toulouse. But they are often to die for. There is a shop in the Grainger market that sells them. Rather dear and a bit anglicised. Get a recette from the internet. They are to die for. Make them big and podgy.
