New things you've cooked during lockdown

I'm doing mango prawns tonight. Prawns, garlic, mango chutney, lime; served with rice or noodles.

Just made some butternut squash risotto. Would normally use white wine but had none so used leeks for a bit more background flavour. Worked really well. Roast the squash beforehand as well which seemed to make a big difference.

Did the Sweet and Sour Chicken from School of Wok tonight, it was really excellent. Much better than from a takeaway - just like Als Kitchen's curries.
Dead chuffed.

Big pan of chilli ( from scratch and not a jar or packet)
Couple of bags of Aldi own tortillas, grated cheese and grilled.
Sour cream and chive on top.
Amazing and better than the ones you get from restaurants

I've perfected my chicken liver curry (with the last of my chicken livers).
That sounds wrong but I'm intrigued.

Think there was a thread a while back where everyone discussed their chilli recipes. When I shared a flat with my mate twenty years ago, the lads used to come round after the pub on a Friday night for my chilli.
Rarely make it these days but made a pan a couple of weeks ago and it was as good as ever.
