Had a builder round today, said its very unlikely to be subsidence. So that's good.
Reckons is just a reaction to boarding the loft out.
Phew.

Can anyone recommend a good filler that has a bit of flex? Just standard caulke?

Telt ya it didn't sound serious.

Internal 90deg joints ,decorators caulk.

Anything else will require 'easifil '.Cut the cracks out with a knife ,if they are bad a scrim cloth over then easifil.

Good. I've got exactly the same problem and my house is also gable end, but built in 1913. Also quite recently had a loft conversation.
