Doves and pigeons are the only birds that can suck water up and swallow with their heads down. Most other species have to take a mouth(beak)ful and then throw their heads back to swallow it. Hummingbirds use their tongues to drink while swifts and swallows drink in flight, by skimming the water with their lower beak.
