when I stay with my girlfriend up in the Alps they have so many good cheeses and are pretty strictly categorised for use, this cheese for fondue, this cheese for toasting, best for luring a bear out of hiding (Camembert) but for me if it was just the one cheese it would be this goats' cheese Brie I order in whole rounds of at a time

On grilled toast, Wensleydale browns beautifully. I'm not always keen on the ones with bits of fruit in (it is really hard to buy plain), but the apricot one on toast is lovely.
