Brie definitely needs more than just cheese. A really good cheddar still the winner for a toastie I reckon.

Good cheddar is probably your best bet.

Provolone or Gruyère if you’re pushing the boat out.

Should always add something though, bit of onion, Worcestershire sauce, salami.. all good choices
