I always assumed they were to be eaten as they are presented.
My take on saveloy dip was dipping the length of sausage into something -I don't know what mind. None of this peeling business entered my thoughts until this thread.

I just take the top off myself. No need to peel any skin back. Dependent on where I'm using it of course.

Apparently prevents infection and is useful to clean minor injuries and wounds like cuts, grazes, bites, stings, and minor burns.
