Black pudding - if steamed - isn't as pleasant (for me) than it is fried. I once got one from Bury Market and struggled to eat the thing

The skin is there to facilitate the heating/cooking/softening of the saveloy.

They are boiled, so the skin isn’t crispy. If you don’t take off the skin, it would be like what I imagine, biting into a knob end
