It's delicious, but half of the chips are still in the carton, as I couldn't get them all on the plate, without covering the fish.

Getting the rotisserie for my BBQ out later today and it's the perfect weather for it.
Porchetta cut of pork from my butchers, I butterflied it all out and put some toasted and crushed peppercorns and fennel seeds in it with brown sugar, flaky salt, lemon rind, chopped sage and rosemary and rolled it back up. I also poured a bit of balsamic vinegar over it I found after searching through the Great taste awards for some.
Just before all that I pricked the skin a ridiculous amount of times and I've covered it in salt to dry it out in the fridge for a couple of days.
I'll cook it on the BBQ rotisserie for a couple of hours and finish in the oven to properly crisp up the skin
