As a young chef I was part of a team that Cooked for him on two occasions and had dinner with him and his wife many years ago.....extremely nice bloke, hard taskmaster, brilliant chef and dedicated to training youngsters, him and his brother raised the profile of chefs and standards of food in the UK probably more than any other in the industry.
RIP to a culinary legend.
Had a meal cooked by him in Dubai about 15 years ago , absolutely fantastic.
A couple of nights later bumped into him by chance and he recognised us and stopped to chat for five minutes.
No doubt someone who was at a pinnacle of his career , but a humble gentleman with it.
