5 nights.
Mid range budget.... not the cheapest but not the most expensive. £600? £800? Dunno really, just want somewhere nice. Will check out Park Plazas, cheers 👍
For 5 nights i would advise following Eppings advice. Serviced apartment.
We used one last summer, near London Bridge. 3 bed flat. Was great. Can't recall the name (which means i am not helping you at all i realise). I will ask the gaffer and revert.

Any of the Premier Inn’s in Zone 1 should do the trick. Try ones towards the City if it’s a long weekend, as they’ll usually be cheaper. I’ve stayed in the Fleet St one for some very good prices and it’s under a 10min walk to the Strand or St Paul’s.

Novotel at Waterloo isn’t bad either. The Grange at StPauls is alright too, although I think it got bought by Jury’s in recently.
 
Stayed at Crown Plaza Kings Cross last couple of times we been to London. Ideal for families, nice enough rooms, bait decent, swimming pool. The tube station is a 5minute walk or a couple of quid in taxi. Cant remember what it cost now but it wasnt expensive.
