What cheeses tickle your palate?

I love a bit of Wensleydale on a nice cracker. And a bit of Brie. Obviously love cheddar and Red Leicester but not a big fan of Blue cheeses.
 

Manchego is my favourite but I’ve yet to come across a cheese I dislike.
I had a package thing this week with manchego and olives with a bit chilli. It was nice.

Jamie Oliver recommends dipping manchego in powdered coffee.

I’ve tried it and I’m not a fan.

I like those quite bland holey cheeses too.

Holey as in they have holes not in a religious context.

Extra mature is always in the fridge. Love manchego and other Spanish cheeses, especially with olives, crackers, sundried tomatoes and cured meats in a restaurant after a meal. Washed down with a bottle of red. Some waiters question why we want that to finish instead of the usual desserts.
 
I had some crazy cheese the other day (yes crazy, I live a wild life) sticky toffee pudding cheddar cheese.

I still don't know if I love it or hate it, proper messes with ya mind when ya eating it cos its cheese but tastes like sticky toffee pudding 😅
 
St Nectaire . Got a couple of days stop off in the Paye de Dome this month while driving south. I'll not shit for a week..
Love any of the Norman soft cheeses too and also stuff like Munster and Dolcelletta piquant. .
