With the running (2 times a week, 3 times every 3rd week) and walking the dogs (an hour every day) it looks like I burn about 3,000 calories a week doing exercise.

Where would that put me on the following. I've gone for 1.45 in-between lightly active and moderate?

Sedentary = BMR X 1.2 (little or no exercise, desk job)
Lightly active = BMR X 1.375 (light exercise or sports 1-3 days/wk)
Mod. active = BMR X 1.55 (moderate exercise or sports 3-5 days/wk)
Very active = BMR X 1.725 (hard exercise or sports 6-7 days/wk)
Extr. Active = BMR X 1.9 (hard daily exercise or sports & physical labor job or 2 X day training, football camp, etc.)

You're moderately active by the sounds of it. Just pick one, stick with it for a while and reassess as you go along. Don't overthink these sorts of things
 
Just walked 15k. Was meant to be the lanchester way walk of around 7k but got lost and had to double back. Think I've earned my beers tonight
Do you use myfitnesspal? It worked well for me but now I can usually gauge how much I consume.

On a Saturday I'd go for a 6-8 mile run to make allowances for a curry on the evening, it was good to psychologically balance out consumption versus burning off calories.
