Spain probably your best bet. Depnding on how long you are hoping to be out there for you can rent a villa out of season for next to nothing. Much of Mallorca wouldbe canny too. Depends what you want in the vicinity... a dip in the sea at the end of your run ?

Mate, this isn't going to be that type of thread. Edit that and tell him how nice the weather is in Mordor or something.

Ideally yeah but won't it be cold? I'm not much of a resort person so a city break with pretty countryside on the doorstep is what I have in mind.

great food, enough to see, countryside nearby, cheap as chips

try and get to a match at San Mames too

I was trying to avoid Spain as I've been loads in the past few years and have just blasted my way through two massive packets of pata negra my friend brought back from Malaga but you can't go wrong really.

Actually @MackneyHackem have you been to Lisbon or Seville?

Yes both. Seville this time last year. I'm thinking of trying to find work in Lisbon as I know a few people who are relocating there.
Train down to Bordeaux or Biarritz.

Went to Bordeaux in September.
