That would be a pity - the meat is delicious in itself, so served as a roast or simple stew for the smaller parts with mushrooms, onions and cream is the best way

Yeah too late mate. I made the sauce last night and had all the ingredients already in the house. I did buy the ciabatta however. I have 30 month aged Parmigiano Reggiano which was hand stirred in copper kettles.
