What makes chocolate go rock hard?



Easter egg chocolate tastes better because they use extra fat in the mixture to keep the egg shape as it's thinner and the normal mix would fold
 
I put a galaxy in the fridge for a few hours but when i took it out the fridge i tried biting it but couldn't.

needs to be kept between 65-70*F, this is optimum condition. As cocoa butter picks up the smell of whatever its next too in the fridge so not a good idea. Moisture in fridge will cause bloom too so will make it look rank 😎

If you have to put in fridge due to warm weather you should let it get back to room temp before eating
