Question for veggies, or people who like some vegetarian food.

If you were challenged to name a vegetarian dish that would persuade a dedicated carnivore that veggie nosh can be interesting, what would it be?

It has to be tasty, filling, satisfying and easily made.

The hummus thread has prompted this....

Edit; no recipes involving meat substitute like soya mince.

roasted veg topped with halloumi cheese

my personal favourite and comfort food - mashed potato with grated cheese and butter in it topped with red-wine onion gravy

Cubes of sweet potato fried in ghee with fresh green chillis, onion, ginger, cumin, salt and coriander, then baked in the oven for twenty mins. Serve with basmati rice, dahl, naan bread, yoghurt, and one or two Indian pickles. Everyone we've served it to loved it, and it's pretty foolproof.

That sounds good, had a beef curry, rice and Roti served with Lime pickle tonight, could sample all that like

I am an omnivore, but often eat vegetarian food. Macaroni cheese (northern style), red onion tarte, cheese and any vegetable flan. Pasta with a myriad of sauces (from vegetables/herbs/spices/cheese etc). So many things.
