Vegan Thread

A good thread, I hope it’s one of those that’s bumped every week or so with everyone’s recipes and discoveries.

Miso tofu tonight with stir fried greens. Was really nice. Tofu isn’t my favourite but when done right with nice glazing or seasoning it’s good.

Mods could make it a sticky
 


Cheap vegan cheese, IMO.

This though is like crack, it's fantastic. Tyne Chease is canny too.

The one biggest disappointment for me is that I thought I'd lose a little bit of weight - but didn't. Despite that, generally feel better in myself, in a way which is hard to define. More alert.

Overall was surprisingly easy to make the change, and we really enjoy what we eat because it's prompted us to keep making new things all the time, which might connect to the weight thing. Try and stay away from processed vegan food as much as possible, but occasionally give in because why not.

I used to be a big cheese eater, but it turned out to be eggs I miss the most.
I’ll try the cheese. I avoid the processed stuff mist of the time. Sometimes it is easy for convenience.
I’ve got to the stage where I sprout my own lentils:D

Mushrooms and lentils cooked in thyme and pepper oil, black beans with chipotle chilli, on peppers and salad with some chilli garlic bread for us.

Not a massive fan of tofu, but like tempeh a lot more.

Not a massive fan of tofu, but like tempeh a lot more.

Sounds lovely mate, never used to like mushrooms much but when I dropped meat I strangely started to love them.

It all sounds like a good idea til you see the latest Mexico70 takeout menu and then it's a big fuck that. Tbf when it's back open they have a cracking vegan menu which I've tried a few times for a change.

It is weird but after a while you don’t notice the meaty stuff. It just isn’t in site even when it in front of you.
Used to live a greggs bacon/sausage/omelette baguette and coffee deal and even when I wasn’t hungry would be munching on one before I’d realise.
Now they aren’t on my radar.
I agree it isn’t for everyone and loads of people think it is barmy but enjoy my food more than I did before.

I have a mainly plant.based diet, not fully as I do occasionally still eat meat/eggs. I just try and balance a lot of plant based stuff with good quality meat.

Initially found it difficult, not so much the lack of meat but making meals I enjoyed that were varied.

Below is a link to an easy, decent chickpea and spinach curry. She adds double cream at the end but coconut milk is fine. Also if anyone has their Al's kitchen base curry this can go in as well.

It can be made with lentils as well.

There’s an awful lot of bollocks in that first paragraph but it’s not up to me to educate you.


I know you think you’re a bit quirky and funny, but your ‘banter’ is lifting on almost thread I’m unfortunate enough to see it on.
It’s odd how these topics create these divides, and I’m not entirely sure why... vegan as a word is like a red rag for some. Very odd...

If you are going to give it a go, I recommend taking her advice and using the chickpea water, something I was initially against but it does enhance the dish and also the optional addition of coconut milk. Hopefully you enjoy it.

Als chana dhal is a canny recipe, usually make it as a side dish to the main curry. B
