Had a lovely steak diana this evening, superb it was. Really really enjoyed it, and on the way home I gave the whole steak thing a thought. You say 'for the record i and others where just trying to help' but the condescending tone says otherwise. It's clear you think you have a superior culinary knowledge to most, which is fine by me, but what does that even mean? To me, 'culinary knowledge' or sophistication, no matter how many michelin star restaurants you've been to, boils down (ha see what I did there) to opinion. The whole subject, no matter how much you want to academise it, is an entirely subjective one.

I'm still wondering if you think Marco Pierre White serves his steaks covered in Bearnaise sauce, because the menu states they are served with it. Bearnaise is like a condiment, like mustard (or.....whisper it...ketchup) and not a sauce like peppercorn, or diane (which are served over the steak). It accentuates the flavour as opposed to changing it entirely. It's served on the side.
And I'd imagine MPW serves his steaks with béarnaise as it is a traditional french steak accompaniment and he is classically (French) trained. And the French tend to serve their steak with creamy potatoes instead of chips, so what the fuck do they know...?![]()

Heston takes it to another level, granted, but the laboratory aspect of his work is more to do with presentation and 'the spectacle' than taste from what I can gather-I might be wrong, maybe a bit of both but more to do with spectacle?
