Poached eggs 🥚 on toast 🍞


Depends on the temperature of the water the whole eggs go into really. I boil the kettle, put enough in a bowl to cover the eggs, put the eggs in. Then fill the pan with the rest of the kettle and by the time the pan is boiling, the eggs are good to crack in.
Doing it the morn. Happy with the way I do it now, but always open to suggestions.

I use vinegar but put them in an ice bath afterwards so you can't taste it. The ice arrests any further cooking so you can make a lot of them and serve together at the perfect temperature. 1 min in hot water brings them back to serving temperature.

The trick to them is to use the freshest eggs possible. It just won't work with old eggs
 
And a common thread is to use the freshest eggs possible. I get mine from my neighbour, fantastic, sunburst orange yolks and I get grumpy nowadays if I have to use store bought ones,

After years of minimal success with probably every method known to man I now use these to poach my eggs and they’re brilliant.

No bother. They keep in the fridge for a few days under water as well so you can poach a load on Saturday morning and then have some on Sunday as well without the faff.

Has to be brown bread for me.
Eggs have to be runny (obviously)
Generously buttered 🧈 toast.
Generous season of salt and black pepper.

Tip . ( Never drop the eggs in boiling hot water that's bubbling ,just smashes the eggs up no need, also no need to swirl the water or add vinegar ,them are just myths they achieve nothing)

Just simply boil the water , turn the heat off, let it rest , crack the eggs in a small bowl,drop them in the water after its stopped bubbling. And wait approximately 3 to 4 mins.

Sorted . Enjoy.

Crack the eggs into a sieve. It will drain off the watery bits which make your poached eggs raggy.

Gently swirl the water and lower the eggs into it as it is slowing. I put my eggs in a small espresso cup to get it into the water

I have tried every method going, followed every tip I've been given and I just never get them to work. Now use those poachie bag things, but don't know if psychological or not, just not the same. Go out to local cafe for veggie breakfast sometimes, sourdough toast, mushroom, tomatoes, fancy beans, halloumi and two poached eggs...yummy. they always put the beans in a separate little glass bowl as well so no straying bean juice
