Poached eggs 🥚 on toast 🍞


I always boil a frying pan of water, then drop it to simmer before putting in the eggs, then up the heat once the egg starts to form. Though I do always lose some of the egg as it spreads out.

Swirling the water is something new to me. I take it is just a gentle swirl rather than create a whirlpool?

Toasted sourdough topped with mashed avocado and chilli flakes - then add two poached eggs (you have to use vinegar to help bind the egg white, if you taste it then you've either used too much or not strained it enough) and finish with a sprinkle of salt & pepper. If really hungry add a grilled portobello mushroom. If hungover add loads of bacon.

I’m not a fan of the vinegar at all, but it works. I find it’s not needed when the eggs a very fresh ( up to 5 days).
 
The best method I’ve found is to place the eggs in a bowl of hot water with th shell still on for a minute before cracking them into the pan. The albumen begins to cook, so they don’t break up in the pan. No need for vinegar or swirling the water.

Fair enough. Annoys me when people put vinegar in the water , wtf. Why . I don't want eggs that taste like vinegar.
you dont put much vinegar in, they dont taste of vinegar. its supposed to be chemistry making the water slightly acidic makes the white cook quicker.
 
Salt in the water?

Old wives’ tale about it raising the boiling temperature. It is so marginal it would make little difference.
May slightly quicken the time to boil tho.

Depends on the temperature of the water the whole eggs go into really. I boil the kettle, put enough in a bowl to cover the eggs, put the eggs in. Then fill the pan with the rest of the kettle and by the time the pan is boiling, the eggs are good to crack in.
