I thought bonito were more like tuna? The ones I’ve seen have always had more tuna like skin and tail and have horizontal stripe pattern?

Honestly I don't think you could be more wrong. Even as expensive as it can be I rarely regret having it.

That said if you have been limited to the old California Roll and a few pieces of salmon sashimi I can understand why you would think it were overrated.
