Oil in a frying pan until it starts smoking.
Plenty of salt and pepper rubbed and pushed into the meat.

Sear it in the pan a minute each side (including the top and bottom) butter in with a sprig rosemary and maybe garlic and baste.

Take it out and in the oven for 15/20 mins.

Rest for 15 mins then slice and serve.
Should you not oil the meat and leave the pan dry? Im sure i saw someone like Raymond Blanc say that is the way to do it so you dont have an oily pan
 


Just googled it as I thought it was some kind of sushi/fish. :oops:

£55 for a joint... :lol: Me n the wife (good god no) dont spend that much on food a week.
