Bottled my first TC today - 6.2%! Gave it a sip, not horrendous seeing as it was warm, flat and brand new. Now to leave it alone for a few months. Got 20l of Youngs lager made with spray malt (5% abv) to bottle on Sunday too... champion!

Will stick the Wherry on after that and then I'm going to try another one of the Young's lagers but dry hopped to try and make something like a Caesar Augustus - getting ambitious early!

I'm just waiting for my IPA to finish so I can put the Newkie Brown on. My sleeping bag is only big enough to tuck one FV up at a time. Still got my Sauv Blanc to bottle as well. Think that's a job for tomorrow seeing as I'm back at work for the next 2 weeks.

nice one. What ya deeing?

Just realised I forgot any tannin (or strong cup of tea) in my TCs and they have finished fermenting. Both are about 6,5%, so wouldn't mind diluting them a bit with tea. Would it worth flinging it in now or is it too late?

Also, has anyone every used www.wineworks.co.uk? Their premium 30 bottle kits are only £32 and it's free delivery on £50 and over. Seems decent like.

No idea, I think it'll be too late though

Can't resist the temptation of the IPA any longer. Been in my garage for a week and it's turned crystal clear, probably due to the cold snap. I've never actually drank an IPA before so want to know what it is like. Will leave the rest to condition longer though

Depends whereabouts it is on the scale of roughness. Somewhere between silky smooth and rough as a shot of caustic soda is acceptable.

Edit: Just got my first taste, really well bodied and got a nice spicy taste to it. Still going to leave the rest to condition more though.
