Easier to do UFC with all the licenses in one place.

Aye I understand licencing is a big issue as people want real fighters to be able to choose from and boxing is far more expensive than UFC to get the licencing.

I've had a Google and apparently there is a boxing game in development which has heavy links with Eddie Hearn and Sky Sports. Will see how that develops.
