Pretty much what you've said, subscribe to EA access for 3.99 a month or about 20 for the year, you'll then be able to play fifa 18 on the 21st, it's limited to a 10 hour trial though.

You can buy icon edition of fifa which will give you full unlimited access from the 26th, 3 days earlier than release.

That's off the top of my head. The sports games usually go on around march so get a few months out of them

Buy fifa on disk then flog it when it's goes to EA Access around March time. Pays for. Access. Essentially getting all the above for free
