problies our Xmas din dins this year.

So haway SMB what’s your best duck recipes. Let’s really tickle Mr P’s palate.

Just roast it Janie, and make sure the skin is crisp and savoury. Rub plenty of salt in pre-cooking. If Mr P has a sweet palate, do him a classic Canard a l'orange. I'd prefer the plain roast duck, with plenty ducky gravy.

edit: Be prepared to give the oven a good scour afterwards. Correctly cooked duck spits a lot.

Also be aware that duck has very little breast meat compared to the bird's size, it's mainly rib cavity. I'd cook two to be on the safe side.
 
Got two duck crowns, reduced to £5 in Morrison's tonight, for the purpose of Chinese duck pancakes. Probably New Years Eve party bait.
