Chilli...

Smoked chopped brisket, none of this mince shite. Onions, pepper, celery, tin of tomatoes, beef stock, coffee, ancho chillis, chipotle chillis, paprika, Black pepper, kidney beans and loads of cumin.
 


My favourite (simple) recipe is...

150g chorizo
500g mince
1 red onion
2 tins chopped tomatoes
1 tin kidney beans
1 tsp ground cumin
1 tsp ground coriander
1 tbsp ground cinnamon
Squeeze of tomato puree
Sweet chilli sauce
Chilli flakes

Chop up the chorizo and cook in a large pan for a few mins
Add the onion and sweat off for 5 mins
Add the mince and cook until browned
Bang in everything else and simmer for about 20mins.
