Just had one for me scran. Had loads of ingredients left, so our lass (do one), says u want another cheeky little one, lusharooney like, proper Bury market black pudding anarl. Highly recommended!

And some left over mashed potatoe

Served with a side salad.

More of a frittata than an omelette but it was lush.

I dont know if its actually Scottish but the lidl black pudding is probably the nicest one I've had from a supermarket and is Stornoway in style. Aldi do a proper Scottish pudding around Burns Night time which is also tremendous.
