Best Sausage



I love Merguez which is from North Africa but they’re not easy to get hold of. Cumberland it is then but the Beef and Tomato from Bolton Bangers used to be lush.
 
Cannot beat a proper, juicy Cumberland one imo.

Different sausages for different times of day imo, sometimes a cheap sawdust filled banger is best for a breakfast sandwich, whereas a more refined, pork and leek fits the bill to go with creamy mash and a red onion jus.
Cumberland covers all bases you fool.

I went through a stage of comparing various bangers for quality like The Black Farmer, Heck's, and other much vaunted products. they were all tasty in their own way but I found that all of them were too firm and dry, almost gritty with little fat content for mouthfeel. What I am about to type will cause mirth among sausage afficianados: my favourite banger is the lowly Walls Thick Pork!!!! I love the spicing and mouthfeel, even though I know the contents are mainly MRM, rusk and fat!

This is undoubtedly the result of my childhood meals in which Walls sossies featured prominently.
