Different sausages for different times of day imo, sometimes a cheap sawdust filled banger is best for a breakfast sandwich, whereas a more refined, pork and leek fits the bill to go with creamy mash and a red onion jus.

I had a fabulous Cumberland sausage in a pub in the Lake District once. A nice big thick meaty one
