Was at the farmers market today and bought some.

Whats the best way to cook it? What shall i serve it with?
 
rinse it and trim off the long bit of root and the leaves to about 2 inches, wrap in double layer of foil and bake in medium oven for 20-40 mins depending on size, the skin will just slip off it
 
My mate grows them and pickles some....gives me a couple of jars that i can sit and eat in a hour......also does a beet and potato salad with dandy leafs....vry nice

tear the tops off - dont cut them

wasf them - dont peel them.

boil them - skins will peel off by rubbing them.

slice them the pickle them in malt vinegar.
 
grated it can be used to make a cake, just follow a carrot cake recipe but use beetroot instead of carrots

I'm going to try this and roasting as well. I've only got a handful like.

Won't be pickling as they'll be eaten straight away like. Thanks for all the advice.
