Blanche 'em, dry 'em, then wrap 'em in parma/serrano ham with a little grated cheese - I tend to use cheddar on account of usually having some in, but manchego etc all good - line, em up in a row n top off with a little more cheese. Sling 'em in the oven for 5-10 mins and voila! Top tapa.Love them. Trim them, a little coating of olive oil and black pepper and grill them under a high heat for a few minutes turning once when they just start to brown. Absolutely lovely.
