Anchovies



Fresh anchovies en escabeche ...look it up and then thank me later...cook in the morning eat in the evening or even next day...or use sardines or mackerel or even the humble herring
 
I love them in a sauce almost as a seasoning, give a tomato sauce some oomph and surprisingly aren’t really fishy when used in that way. Surprisingly good with lamb too. Not a fan on pizza though, don’t really know why.
 
Love them.
Got into them years ago when living in S.Korea,they cook them all ways.
Spring time down on the little costal places, fresh ones.
