I want to put beef dripping in instead of vegetable oil...will this be ok? And will it 'set' when it cools or will it remain liquid?

It will set. It will also stink but the chips will be nice. Are air fryers a pile of shite then?

dripping will reset surely.
Do our chips on 140 till cooked through but not properly browned then turn it up to 170 and whack them in to crisp them up--lovely

Yes mate it will honk like an old chip pan used too. If you can put it under your extractorn when using it then do that.
