All Quiet on the Western Front. It's from the German perspective but is realistic.

Either version is good. The original is often on Skyclassic or TCM at present.

    Aside from those mentioned :

Regeneration deals with the aftermath for the troops and is very good (not as good as the book though).
Lawrence of Arabia is kind of a WW I film.
There's the films about the pilots - The Blue Max and Aces High as well.

Not actually that many really, I guess that trench warfare isn't, by and large, particularly filmic.

Kubrick's Paths of Glory is probably the best WW1 film

The re-make in the late 70's is also worth watching once you get your head round the fact that John-Boy from the Waltons plays one of the leads!
It was made as a TV film but battle scenes are very well done considering

    http://www.imdb.com/title/tt0078753/

both versions are worth a watch.

Gallipoli has already been mentioned and is a very good film

Have a look at Passchendaele, it's a recent Candian film, don't know if it's any good or not as I haven't got around to watching it yet.
